tofu cheese cake

Recipe:

Graham Cracker                       3cups

Butter (Melted)                       1/2 cup

Tofu                                                1 lb

Sugar                                             1 cup

Soymilk                                        1/2 cup

Cornstarch                                  2 tsp

Vanilla Extract                        1 tsp

SeaSalt                                      1/4 tsp

Lemon Zest                            1/4 tsp

Procedures:

  1. Preheat the oven to 375F.

  2. Melt the butter using microwave. And then, bread the crackers into crumbs. Pour the melted butter over crumbs and mix well.

  3. Grease a 9-inch springform pan, transfer the crumb mixture into it, and press them hard and form a crust. Set it into the freezer until use.

  4. In a food processor, blend tofu into slurry, add in all other ingredients and mix until well combined.

  5. Transfer the batter into the pan with crust.

  6. Bake for an hour (until a toothpick inserted and comes out clean).

  7. Refrigerate overnight.
