snowskin mooncake

Recipe:

Cooked Glutinous Rice Flour      100 g

Icing Sugar                                 80 g

Shortening                                  30 g

Water                                          150 ml

Food Coloring (Gel)                  Few drop

Vanilla Extract                           1 Teaspoon

Filling                                         500 g 

(Black Sesame/ Lotus)

Bowl 

Mold 

Sifter

Scale 

Procedures:

  1. First, place the cooked glutinous rice flour in a large bowl, and make a hole in the middle.

  2. Then, place other ingredients in the middle, and start mixing it until it forms smooth round dough. Then knead 5 minutes more.

  3. Dust generous amount of flour on your working station, roll the dough to form a long strip. Cut them into 25g balls.

  4. After that, weigh the filling into 25g balls. Flattened the dough using hands, and wrap in the filling.

  5. Dust some flour in the mold. Place the ball into the mold, press it hard and make sure all the edges are shape too.

  6. Make the rest of them, and then place them in the refrigerator overnight. Or, have it right away!
